Redwood Valley, Mendocino County Vineyards and Harvest The grapes were Estate Grown and Organically Farmed from our family’s Mendocino County vineyards located in Redwood Valley. The grapes were harvested and field-sorted by hand in mid October 2004 at an average of 27.1 brix. Winemaking and Cooperage The grapes were picked at full maturity, de-stemmed and gently crushed into fermenters. The simultaneous harvest of Cabernet Sauvignon and Merlot allowed us to perform a co-fermentation for this vintage. The must soaked at a cool temperature for seven days, at which point native yeast fermentation began. Post-fermentation maceration with heat followed for five days. The wine was aged in new French Oak (35%) and in two-year-old (65%) for 22 months, which included six months of native malolactic fermentation. The blend was assembled and bottled without filtration. This vintage received 1 year of bottle age before its release in February 2008. Rich tannins offset an accessible mid-palate and provide for a decadent finish. Co-fermentation contributed to the full flavor integration and therefore luscious mouthfeel of this handcrafted wine.- Ken Oster, Winemaker
